I’ve been very intrigued by New York Times food critic Mark Bittman’s story about eating vegan during the day and whatever he wanted at night. He did it for environmental and health reasons, and in addition to helping to save the planet with the power of his plate, he ended up losing about 35 lbs. Okay? Loving this all around.

I’d like to give it a try. I don’t really see a downside here. But I’m a little unimaginative when it comes to things like breakfast. I eat the same ol’-same ol’ every ding-dong day: low-fat yogurt with flax seed and fruit. Now, besides the duh-obvious cereal with soy milk, what do vegans eat for breakfast?

Plenty of awesome-sounding stuff, as I found out from this great website full of quick, simple vegan recipes. Those are just the ones for breakfast, but there are more for lunch and dinner, too–hundreds of them.

You don’t have to become a full-on vegetarian or vegan to want to eat healthier, conserve our planet’s precious resources, save money, and spare both animals and people needless suffering. And all that can be done by making a few delicious choices in what we eat. Yes, you too can change the world–before you even change out of your pajamas!

    If you're going vegan you must try almond milk. Blue Diamond has a 60 calorie vanilla flavor that is fabulous. It's great in smoothies, or my favorite, with chocolate cheerios!

    Nicole, you evil genius. Almond milk in chox Cheerios? That sounds like something that would keep me from leaving the house for at least a week! Until I ran out of those two ingredients, that is…
    Have you tried Silk's almond milk? Rather tasty. I was exposed to it via a chocolate peanut butter banana smoothie. WOAH. That was some kind of crazy deliciousness going on there.
